Your Low Carb Lifestyle

It’s hardly a secret that high-protein, low-carb diets have taken North America by storm. You may even be one of the tens of millions of North Americans on these diets that have turned the traditional food pyramid on its end. Living Gluten-Free

Celiac disease is an autoimmune condition in which your body’s reaction to gluten (a protein in cereals and some grains) results in damage to the lining of your small intestine. Gluten is found in wheat and rye, but it can also be found in barley, oats, and other grains. Because of the damage caused to your small intestine, your body is incapable of properly absorbing nutrients.

Experts do not know why people get celiac disease. They do agree that it is caused by an abnormal reaction from your immune system to gluten, a protein found in foods such as bread, pasta, and many sauces, and even some medications. When you eat or drink anything that contains gluten, your immune system produces antibodies against it – Antibodies are proteins that your body normally produces to fight off infection and disease. What is Diabetes?

Diabetes is widely recognized as one of the leading causes of death and disability in North America. In 2000, it was the sixth leading cause of death. Diabetes is a disorder of metabolism, the way our bodies use digested food for growth and energy. Most of the food we eat is broken down into glucose, the form of sugar in the blood. Glucose is the main source of fuel for the body. Glucose is used by cells for growth and energy. For glucose to get into cells, insulin, a hormone produced by the pancreas, is required. When we eat, the pancreas should automatically produce the right amount of insulin to move glucose from our blood into our cells. In diabetics, however, the pancreas either produce little or no insulin, or the cells do not respond appropriately to the insulin that is produced. Glucose builds up in the blood, overflows into the urine, and passes out of the body.

Types of Diabetes

The three main types of diabetes are:

  • type 1 diabetes
  • type 2 diabetes
  • gestational diabetes

Type 1 diabetes is an autoimmune disease. An autoimmune disease results when the body’s immune system turns against a part of the body. In diabetes, the immune system attacks the insulin-producing beta cells in the pancreas and destroys them. The pancreas then produce little or no insulin. A person who has type 1 diabetes must take insulin daily to stay alive. Type 1 diabetes accounts for about 5 to 10 percent of diagnosed diabetics. It develops most often in children and young adults, but can appear at any age. The most common form of diabetes is type 2 diabetes. About 90 to 95 percent of people with diabetes have type 2. This form of diabetes is associated with older age, obesity, family history of diabetes, previous history of gestational diabetes, physical inactivity, and ethnicity. About 80 percent of people with type 2 diabetes are overweight or obese. In type 2 diabetes, the pancreas is usually producing enough insulin, but the body cannot use the insulin effectively, a condition called insulin resistance. After several years, insulin production decreases. This causes glucose to build up in the blood, overflow into the urine, and pass out of the body. Gestational Diabetes is a temporary diabetic state brought on by pregnancy and may lead to other forms of diabetes.

There are two broad categories of fiber, soluble and insoluble. Both soluble and insoluble fibers are vital to good health, proper immunity and nutrient absorption. These two forms of fiber perform different functions in your body. Contrary to what most people think, both soluble and insoluble fibers are not digested by your body.

They are therefore not absorbed into the bloodstream. Instead of being used for energy, fiber is excreted from our bodies.

Most foods contain a mixture of soluble and insoluble fiber, which together make up “dietary fiber”, the term used on food labels. Fibers that can dissolve in liquids are called soluble fiber and those that can’t dissolve in liquids are insoluble.

Insoluble fiber has one main health benefit. It acts as “roughage” irritating and scratching the digestive system which acts as a broom, cleaning the colon of dead cells and waste, but also causing irritation. Unfortunately this beneficial “broom action” also decreases nutrient absorption and interferes with some medications.

Fiber is the portion of plant foods (whole grains, fruits, and vegetables) that our bodies cannot digest. Because dietary fiber is resistant to digestive enzymes, it is not broken down or absorbed, which means it does not provide calories or energy to the body. This process produces by-products known as short-chain fatty acids, which help maintain proper acid / base balance in the colon and for this reason may play a role in the prevention of colorectal cancer.
